Gelatin is both surfactant and structure
During whipping, gelatin adsorbs at the air–water interface and stabilises the bubbles being created. As the mass cools it gels, converting a temporary foam into a permanent one. Few ingredients perform both roles, which is why gelatin remains central to marshmallow and why substitution changes the process as much as the product.
Whipping temperature controls bubble size
Aerating too hot produces large, unstable bubbles that coalesce before the mass sets, giving a coarse, uneven crumb. Aerating too cool raises viscosity to the point that air cannot be incorporated efficiently and density rises. The optimum sits in a narrow band that depends on the specific formulation and should be established rather than inherited.
Higher Bloom supports finer structure
Stronger grades set faster and hold smaller bubbles, producing the fine, uniform crumb associated with premium products. The trade-off is a firmer bite and a shorter working window on the line. Where the product is intended to be soft and yielding, a lower grade at a higher dose may reach the target texture with a more forgiving process.
Sugar profile determines how long the foam survives
The balance of sucrose, glucose syrup and invert affects water activity, crystallisation behaviour and how the foam ages. A formulation that whips beautifully and coarsens within a week is usually a sugar problem rather than a gelatin problem. Shelf-life assessment should therefore include crumb structure, not only moisture and texture readings.
Depositing has a short window
Once gelling begins, viscosity climbs quickly and the mass becomes difficult to deposit cleanly. The interval between the end of aeration and the completion of depositing is a real process constraint. Lines that run close to that limit are vulnerable to any stoppage, and building in margin is cheaper than recovering a set-up in the pipe.
