Specify the function before the market label

“Food grade” or “pharmaceutical grade” does not by itself describe how gelatin must behave. Two products in the same category can need different gel strength, viscosity, colour, particle size or microbiological limits. Begin with the required function and failure mode, then translate those into measurable attributes.

Confectionery: design the bite and the process together

In gummies and jellies, gelatin affects elasticity, bite, release and temperature response. High sugar solids, acids, depositing temperature and conditioning all influence the final network. Acid exposure at elevated temperature can reduce gel performance, so acid addition timing and hold time matter as much as the nominal Bloom value.

  • Define bite using a reference product or texture measurement—not “soft” or “firm” alone.
  • Record cook solids, depositing temperature, acid-addition point and conditioning conditions.
  • Evaluate demoulding, oiling or sanding after the full cure period.
  • For aerated confectionery, coordinate whipping, density and setting so the foam is fixed before collapse.

Food and beverage: interactions often control the result

Dairy desserts, meat systems and beverages expose gelatin to different proteins, minerals, salts and pH conditions. A grade that performs well in a simple gel may behave differently in the finished matrix. Pilot work should use representative water, ingredient sequence and thermal history.

Pharmaceutical formats demand control beyond Bloom

Hard capsules, soft capsules and microencapsulation use gelatin as a film-forming material. Viscosity, mechanical behaviour, drying response, clarity, dissolution and microbiological quality may be specification-critical. The fill system can also interact with the shell through water movement, pH, aldehydes or reactive ingredients.

  • Define compendial, regulatory and customer-specific requirements for the destination market.
  • Qualify shell or process performance on the intended equipment.
  • Study fill-shell compatibility across shelf life, not only at manufacture.
  • Agree test methods and change notification for critical physical and microbiological properties.

Scale-up is part of material qualification

Bench work narrows the grade, but plant equipment determines dispersion, heat transfer, shear, residence time and cooling rate. A controlled scale-up compares the candidate against the approved reference under normal and edge-of-window conditions. The resulting process window is more valuable than a single successful trial.
