Moisture governs storage life
Gelatin is hygroscopic and will move toward equilibrium with the air around it. Material delivered comfortably within specification can drift upward in a humid store, and elevated moisture brings caking, microbial risk and a gradual loss of gel strength. The specification limit describes the material at dispatch; maintaining it is a warehousing responsibility, not only a supplier one.
Moisture also affects your dosing accuracy
Because gelatin is dosed by weight, a batch carrying more water delivers less protein per kilogram. Across a normal moisture range the difference is small but not negligible in tightly specified products. Where gel strength tolerances are narrow, correcting dosage against the actual moisture on the certificate removes a source of drift that otherwise looks like supplier inconsistency.
Ash indicates mineral residue
Ash is what remains after complete combustion, and it reflects mineral content carried through from raw material and processing. High ash can signal incomplete washing or demineralisation and may bring haze, off-notes or unwanted ionic interactions. For clear applications and for systems containing charged ingredients, a low and consistent ash figure is worth more than a favourable Bloom result.
pH sits at the centre of compatibility
The pH of a gelatin solution influences clarity, charge behaviour and how the protein interacts with everything else in the formulation. It also interacts with the isoelectric point of the grade in question. A specification that fixes pH within a narrow band gives the formulator a stable starting point; one with a wide band transfers that variation into the finished product.

These three figures are more informative together than apart. Moisture at the top of its range combined with ash at the top of its range describes a different material from one sitting mid-range on both, even though each individually passes. Reviewing certificates as a pattern over several deliveries reveals process drift long before a single result breaches a limit.

The value is in the trend: a slow climb in moisture or a widening spread in pH is an early warning that something has changed upstream. Raising it while every batch still passes is a far easier conversation than raising it after a failure.
