Because gelatin readily absorbs atmospheric moisture, ambient humidity is the single largest threat to stored material. Absorbed water encourages caking, raises microbial risk and accelerates the slow decline in gel strength. A store that is cool but damp is worse for gelatin than one that is warm and dry, which is the opposite of most people's intuition.

Keep the original packaging intact

The multi-wall bags and liners gelatin ships in are a moisture barrier, and their protection ends the moment they are opened. Part-used bags should be resealed immediately rather than folded over, and decanting into open bins should be avoided wherever the material will not be consumed the same day. Most avoidable moisture pickup happens after the first opening, not in transit.

Temperature matters mostly through cycling

Moderate warmth alone does gelatin little harm. Repeated cycling between warm and cool does, because each cycle drives condensation inside the packaging. A store held steadily at a slightly higher temperature is preferable to one that swings daily, which is why placement away from external doors and unshaded walls is worth more than a lower set point.

Rotate stock and mean it

Gelatin has a long but finite usable life, and gel strength declines gradually rather than falling off a cliff. First-in-first-out handling keeps the average age of consumed material low and the performance predictable. Where stock rotation is informal, the oldest pallet tends to become permanent and eventually produces a batch that behaves unlike every one before it.

Segregate from odours and contaminants

The same porosity that takes up water takes up volatile compounds. Gelatin stored near solvents, strongly flavoured materials or cleaning chemicals can pick up notes that survive into the finished product. Dedicated space, or at minimum an enforced separation distance, prevents a contamination route that routine testing is unlikely to detect.

Re-test material that has been held a long time

Where a batch has been in store well beyond normal turnover, or where storage conditions are known to have lapsed, a Bloom and moisture check before use costs little against the value of the batch it protects.
